Castell Morella is a pyramid shaped goat cheese covered in a layer of grey mold. Coming from Valencia, this artisanal cheese is aged in caves for about 30 days.
Castell Morella has a rather elastic texture, with no eyes and creamy to the whole palate. The flavor, of medium intensity, is slightly sweet and salty, with hints of nut.
Pairs well with cava, champagne and fruity white wines.
